Yummy Muffins

Today I have a Fit and Fabulous Recipe to share with you.
These muffins are a super way to start your day and also make for a great snack. They are healthy, filling and portable – so check them out! (The ones you see in the photo are made in those mini-muffin tins)

Happy Tummy Breakfast Muffins

Preheat oven to 375 and line muffin cups with paper baking cups.

Combine all dry ingredients and set aside:

1 1/2 cups AP flour
½ cup sugar or substitute of your choice
2 tsp Baking Powder
1 tsp Baking Soda
½ tsp salt
2 tsp Cinnamon

Now take 2 Cups All Bran Cereal and 1 ½ cups of Milk (Almond, Rice or Soy also will work fine) and mix together until wet.

Add to wet cereal the following:

½ cup Coconut Oil
1 Egg
1 8oz can crushed pineapple
2 generous handfuls of dried cranberries
2 generous handfuls of chopped walnuts
1 extra handful of walnuts for muffin toppings

Blend all together and then add in the dry mixture from above. Gently fold together and scoop into muffin tins. Top with extra walnuts and bake for about 15+ minutes.
Let cool in the tins for 1 minute and then move to baking rack.

There are endless variations here – I love to add dried blueberries and chia seeds. Other ideas would be flax, dried apricots, coconut flakes and maybe even dark chocolate chips if you are feeling naughty. As is – they are very healthy and full of fiber! Your body with thank you!
